Soup is easy to make and tends to be low in calories, so people like to use it as a way to lose weight. There is the cabbage soup diet which forces you to eat more of a vegetable stew than a soup for almost every meal, then you have the negative calorie diet which gives you a similar kind of soup which is low in calories. They are designed to cut down your daily calorie intake while still giving you something to eat so you don’t mentally rebel against the lack of food. These diets don’t teach you how to eat properly though, they are just a quick fix and as soon as you starting eating real meals again you’ll probably put the weight right back on.
